Black Bean Veggie Burgers
Dear Diary:
Ingredients:
1 / 2 cup red onion
1 / 2 cup chopped bell pepper
1 clove garlic, minced 1 jalapeno
crude
2 cups chopped black beans
refried beans 1 / 2 cup cooked corn kernels
1 / 2 cup bread crumbs (can use bread to make it healthier)
1 / 2 tsp.
2 tablespoons cumin.
chopped fresh cilantro 1 tsp.
salt 1 / 2 cup flour
Procedure:
In a saucepan over medium heat, add 1 tablespoon olive oil, saute onion, pepper, garlic and jalapeno chile, 4 to 5 minutes. Remove from heat and reserve.
In a bowl, combine the black beans and then add the sauteed vegetables, corn and bread crumbs, mix well. Season with cumin, cilantro and salt, mix again.
Form 6 "pancakes" that is, disks of approximately 13cm in diameter and 3 cm thick, then breaded in flour each.
Place a skillet over medium-high and add the remaining tablespoon of oil. Fry each patty for about 5 minutes per side or until lightly browned. Makes 6 burgers
